Zuchinni Noodle Pasta Salad

This can be an amazing side dish or a entree if you add a protein. Goes together in minutes! I made it at nap time (1pm) and we ate it for dinner. I think it's best to let it marinade for a few hours before you eat it. Too long and it will be soggy but too short and you won't get all the flavors.

I made it as a side salad on day one then on day two added spinach and chopped chicken for a easy lunch!


2 Zucchinis

1/4 Cup Sweet Drops

1 Cup Cherry Tomatoes

1/8 Cup Red Onion Sliced

2 TBS Olive Oil

1 TBS Red Winer Vinegar

1 tsp Italian seasoning

1 tsp salt


Spiralize your zucchini and place in a large bowl

Add the olive oil and red wine and Italian seasoning and use your hands to mix it all up.

Then add all the other ingredients.

Feel free to add more, basil, corn, black olives....

I really don't feel like any of this needs to measured. Just toss it all together, taste, modify and enjoy!


Would be good with Salmon.

Could add some real pasta and protein for a great entree.

Shrimp would also be good in it.
