Super Sushi Bowl

Do you love sushi?  I do but Gerry doesn't and sushi just isn't as fun alone.  It is also so expensive.  I do make rolls at home but it is time consuming and makes a mess.  This sushi bowl has all the flavors of sushi and is super easy and healthy.  I used Fustini's ginger honey balsamic.  It is so marvelous.  Just a little sweet and tart.  It's perfect but there are lots of other options for vinegar that would be good.  I also think there are lots of other veggies that would be good so feel free to substitute and experiment. 

Low carb, gluten free, full of vitamins, protein, and antioxidants.  I hope you enjoy!

 

Tuna or Salmon Cooked med/rare in coconut oil

Head of Cauliflower steamed

Cooked White Rice/Sushi Rice (Optional)

Cucumber Sliced

Shredded Carrot or could steam it with the cauliflower

Red Bell Pepper Sliced

Green onion

Cilantro

Avocado

Sesame Oil

Fustini's Ginger Honey vinegar or rice wine vinegar or apple cider vinegar...

Soy sauce or coconut aminos

Sesame Seeds

 

Cook the white rice or sushi rice according to the directions on the package

Cook your fish Med/Rare in coconut oil.

Steam your cauliflower and carrots if you prefer

Then arrange all the vegetables in a bowl with the fish.

Drizzle about 1/2 TBS toasted sesame oil and rice vinegar and soy sauce over each bowl

Sprinkle with about a tsp of sesame seeds

 

I used about 5 oz of fish, 1/4 rice and a ton of cauliflower, 1/4 of the avocado, and a handful of each other veg.  You can use as much or as little as you like.
